Pusha Cream T Cupcakes

This week has been mad hectic with running, working everyday, a cheeky trip to puppy school,  and a weekly DA with Liz however a playas gotta play and I did manage to squeeze a bake off in before work yesterday. This one came to me mid run and I quickly whacked out the phone and wrote it down before the sweat took over my brain. I haven't had an uninterrupted run all week, in fact it was this morning I had the delight of a lovely 80 year old man come up to me on the treadmill and say ''You're a winner, I know it''...well he could obviously see me struggling with the last kilometre and I couldn't let him down, he was believing in me so I sprinted the rest and moved to the cross trainer where he proceeded to shout ''WINNER, WINNER'' across the gym at me. What a treat, he is probably my new favourite gym playa and I reckon we've got the foundations of a firm friendship. Anyhow I was on the afternoon tea flex  hence the clotted cream and fruit cake kinda vibe, wasn't sure how these were gonna taste as it was a definite freestyle job but the reviews were strong, might even go as far to say What dreams are made of!?

Pusha Cream T Cakes

You will need:
6oz Butter
6oz Caster Sugar
3 eggs
6oz Self raising flour
Vanilla Extract
Raisins
Almonds

For the topping:
Clotted Cream
Raspberries
Almonds
Raspberry Dark chocolate



This recipe is perfect for the remix of ''Trouble on my mind'', No Pusha I got ''Baking on my mind'', as you can imagine there are various lines I changed in the track whilst whisking away but I think its fair to say Pushas verses were a lot better than mine. So you will need to beat the butter and sugar together to a nice creamy texture, adding the eggs one at a time. Now simply sift the flour into the mix making sure you fold the mixture. You can see I just used a simple sponge mixture and then added a few extras for the afternoon tea vibes. a couple of handfuls of raisins and then also a few cheeky almonds remixed up with a couple spoonfuls of vanilla extract and you can spoon these into the cases. Go hard in the filling of these cupcakes as you will need to slice off the top later yo! Bake on 170C until golden brown.

Once cooled you can then slice the tops off to create a nice flat base to work that Clotted cream onto, now the decoration is pretty much dependable upon your personal taste, I went for Clotted cream, raspberries, almonds and a grating of raspberry dark chocolate...yeah I don't mess around!

I kinda wanted to post the track ''Kitchen'' from ''Still ya Pusha'' that I was listening to yesterday but then thought  I better go for a club banger plus I did love this video when it came out...mainly cos I was mad crushing on Tyler at the time, over that now thank god!
